Jeolla-do, situated in the southern part of Korea, distinguishes itself with a rich culinary tradition. This region, known for its abundant ingredients, particularly utilizes fish sauce and salty fish, resulting in a thick and flavorful kimchi sauce. The addition of fish broth enhances the umami profile of the kimchi, a distinctive characteristic attributed to the region's access to fresh seafood from the Southern Sea and an abundance of seasonal vegetables in the warmer climate.

Young Radish Kimchi  총각김치
Young radish kimchi, also known as ponytail radish, is a delightful blend of taste and texture. The radishes undergo a three year brining process with the finest sea salt from the Shinan region to extract any bitterness. They are then marinated with a robust kimchi sauce crafted from the highest quality ingredients sourced from around Korea.

Every year the leader of HaeDamChon ventures to Shinan, renowned for its shrimp and seafood, to procure ingredients at the local fish market. The selected shrimp, fish, and anchovies are then hand salted and left to ferment in a cave for a year. The result is a radish kimchi that truly shines, showcasing the exceptional flavors derived from meticulous craftsmanship.
